
Instructions:
1. In a pot, melt butter or heat oil over medium. Sauté onion for 3–4 minutes until soft. Add garlic and cook 1 more minute.
2. Add broccoli and carrot. Pour in broth and bring to a boil. Reduce heat and simmer until broccoli is tender (about 10–12 minutes).
3. (Optional) In a small bowl, whisk 1 tbsp flour with a bit of the Varty organic oat beverage - original to make a slurry. Stir into soup and simmer another 3–4 minutes to thicken.
4. Stir in Varty organic oat beverage - original. Let it heat through without boiling.
5. Reduce heat to low. Gradually stir in shredded cheese until melted and smooth. Avoid boiling once cheese is added, or it may separate.
6. (Optional) For a smoother texture, blend half the soup with an immersion blender or regular blender, then return to the pot.
7. Add salt, pepper, and a pinch of nutmeg if desired. Serve with crusty bread or grilled cheese.
