Cashew & Oat Milk Olive Dip

Instructions:

1. Cover cashews with hot water and let soak for 15–20 minutes. Drain and rinse.

2. In a blender or food processor, combine soaked cashews, Varty organic oat beverage - barista, lemon juice, garlic, and olive oil. Blend until smooth and creamy.

3. Pulse in the chopped olives until just combined — keep some texture. Season with salt and pepper to taste.

4. Transfer to a bowl and top with a drizzle of olive oil, garnish with olives, capers and pistachios.

Ingredients

• ½ cup raw cashews (soaked in hot water for 15–20 minutes, then drained)
• ¼ cup Varty organic oat beverage - barista (adds creaminess and body)
• ⅓ cup pitted green or black olives (or a mix), chopped
• 1 tbsp lemon juice
• 1 small garlic clove (or ½ if sensitive)
• 1 tbsp olive oil
• Salt and black pepper, to taste
