Vanilla Oat Milk Ice Cream

Instructions:

1. In a small bowl, whisk cornstarch with 3 tbsp of Varty organic oat beverage - original or barista until smooth.

2. In a saucepan, combine remaining Varty organic oat beverage - original or barista, coconut milk, maple syrup, and salt. Bring to a gentle simmer over medium heat.

3. Stir in the cornstarch slurry. Continue whisking over low heat for 2–3 minutes until slightly thickened. Remove from heat.

4. Stir in vanilla extract. Let the mixture cool to room temperature, then refrigerate for at least 4 hours (or overnight) until very cold.

5. With ice cream maker: Churn according to your machine’s instructions. Freeze for 1–2 hours for firmer texture.

6. No churn: Pour into a freezer-safe container, stir every 30 minutes for the first 2–3 hours to reduce iciness.

Ingredients

• 2 cups Varty organic oat beverage - original or barista (barista for extra creaminess)
• ¾ cup full-fat coconut milk (or cashew cream, optional but improves texture)
• ½ cup maple syrup or agave (or ⅓ cup for less sweetness)
• 1½ tbsp cornstarch (or arrowroot powder)
• 1 tbsp vanilla extract
• Pinch of salt
