Coconut Banana Chia Pudding with Vanilla Oat Milk

Instructions:

1. In a jar or bowl, whisk together chia seeds, Varty organic oat beverage - vanilla, coconut milk, mashed banana, vanilla extract, and sweetener. Stir well to combine.

2. Let the mixture sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 2 hours, or overnight for best results.

3. Once thickened to a pudding-like consistency, give it a good stir and load with toppings.

Ingredients

• 3 tbsp chia seeds
• 2/3 cup Varty organic oat beverage - vanilla
• 2 tbsp coconut milk (full-fat for creaminess)
• ½ ripe banana, mashed, plus some in pieces for texture
• ½ tsp vanilla extract (optional, for extra flavour)
• 1 tsp maple syrup or honey (optional, to taste)
• Pinch of salt (optional, enhances flavour)

Toppings:
• High protein plain yogurt
• Sliced banana
• Shredded coconut
